The founder, Luigi Cilento, was born in Vico Equese, a small town located on the Sorrentine Penisula. From an early age he was intrigued by dairy products, and worked in local dairies in the area.
In 1956, Luigi moved to Cellole, a town on the northern border of the Campania region – an unspoilt territory. In 1976, along with his brother Giuseppe, he began the production of buffalo mozzarella.
Cilento, once a small dairy, eventually developed into a modern food plant. Keeping family as the core value of this company, the third generation of family members currently manages the firm, maintaining a strong focus on tradition and quality.
Cilento is a leading Italian dairy company, producing specialty fresh cheese, all whilst preserving the authentic tradition, from generation to generation. The cheese is crafted from water buffalo milk and the company products are: Mozzarella di Bufala Campana DOP, Buffalo Burrata and Buffalo Ricotta. The modern factory is situated on a 100.000 sqm area, 15.000 sqm of which is dedicated to the production plant. State-of-the-art facilities and cutting-edge technologies guarantee true quality and food safety. The new plant, current under developement, will offer an additional 7.500 sqm production flor.

Cilento collects only PDO(Protected Designation of Origin) buffalo milk, from selected farms in the PDO area – Italy.
Buffaloes love to be free-ranging. The faithful reproduction of their natural habitat along with genuine feeding methods, enable these animals to create high quality milk. Through the help of a specialized agronomist, Cilento is able to verify the feeding and wellbeing of the animals through daily checks and tests.

A TRADITION THAT IS CONSTANTLY RENEWED
Every day at dawn, the fresh milk is collected.
After the quality of milk is tested through strict controls, pasteurisation takes place. Milk coagulates and turns into curds, by adding rennet and natural whey, through a natural ripening process.
By mixing curds with boiling water and later cutting off into single pieces (that is, in Italian: “mozzatura” – hence the name), the mozzarella is finally crafted in various sizes. Burrata is crafted by filling mozzarella with mozzarella shreds and cream. Mozzarella and Burrata are then placed in water until they harden and, subsequently, salted in brine.
After further quality controls, products are ready to be packaged.
High standards of production and state-of-the-art production facilities, are key to ensuring food safety.
The internal laboratory performs daily in-process controls throughout the supply chain, to ensure wholesomeness of products placed on the market.
Cilento seeks to achieve energy self-sufficiency through the production of energy (3Mw/h), from renewable sources, with low impact on the environment.
Prior to being released back to the natural water system, the water used in production and cleaning, undergoes a biological treatment process in a sewage plant equipped with cutting-edge technology, ensuringwater purity. Controls mean quality.
