The founder, Luigi Cilento, was born in Vico Equese, a small town located on the Sorrentine Penisula. From an early age he was intrigued by dairy products, and worked in local dairies in the area.
In 1956, Luigi moved to Cellole, a town on the northern border of the Campania region – an unspoilt territory. In 1976, along with his brother Giuseppe, he began the production of buffalo mozzarella.
Cilento, once a small dairy, with passion and courage eventually developed into a modern food plant. Keeping family as the core value of this company, the third generation of family members currently manages the firm, maintaining a strong focus on tradition and quality.
Leader in exstension and production capacity. The modern production plants extend over an area of 100,000 square meters, of which 25,000 are roofed. Equipped with state of the art systems and capable of combining tradition and taste.
To be ambassadors both in Italy and abroad of our lands and to bring onto the consumers’ tables an unforgettable flavour.
Despite the expansion and automation of our processes, our mission is to preserve an authentic taste.
The Bufalina supply chain
The Bufalina supply chain means only DOP buffalo milk, a single territory, and a strong bond with our breeders where an essential prerequisite is animal welfare.
Today, as thousands of years ago: a tradition that is constantly renewed
Fresh milk is collected every day at dawn. Once the rigorous controls have been completed, after pasteurization, with the addition of rennet and natural whey, the milk coagulates into curds, which are expected to mature naturally.
By spinning it with boiling water following its forming the mozzarella finally comes to life.
Mozzarella, produced in the most varied sizes, and burrata follow a passage in water and, subsequently, in brine. After the last checks, the products are ready to be packaged.
Animal wellfare is a key point to us. We believe that the quality of the milk is better if the buffaloes are happy! With the help of an expert veterinary, we follow each farm to ensure the quality of nutrition, environment and milk.
Each production is “passed under the microscope” by our Quality Assurance team in the internal laboratory equipped withstate-of-theart equipment.
The internal laboratory performs daily in-process controls throughout the supply chain, to ensure the
quality and food safety of the products.
